KIOSKS AND CARTS CONDUCTING FOOD PREPARATION
1. Apply for a foodhandling permit in the offices of the Paramus Board of Health.
2. Advise the Health Department of the date the kiosk is in the mall so that an inspection can be
arranged.
KIOSKS AND CARTS CONDUCTING FOOD PREPARATION AND SERVICE OR WHICH SELL OR
SERVE NON-PACKAGED FOOD
1. The Kiosk or cart must be equipped as follows:
a. A self contained sink for the purpose of handwashing must be located on the unit.
b. A three compartment sink is required for the proper washing, rinsing and sanitizing of
equipment and utensils. This unit may be located at the kiosk or cart, or elsewhere in the
shopping mall. A written agreement with another food establishment which permits usage of
their three compartment sink may be submitted to demonstrate compliance with this
requirement.
The sink
shall be equipped with hot and cold running water, a water supply tank, and a waste water
tank which is at lease 15% larger than the water supply tank.
c. All food products shall be protected from patron contamination through the installation of
appropriate sneeze guards.
d. If perishable food items are to be sold or served, adequate mechanical refrigeration shall be
installed on the unit.
e. Kiosks and carts are prohibited from serving or selling potentially hazardous foods.
f. Kiosks and carts shall provide only single service articles for use by the consumer.
g. All food contact surfaces on the cart of kiosk shall be smooth, washable, durable and easily
cleanable.
2. If the above requirements can be met, submit the following to the Paramus Board of Health:
a. a diagram of the cart or kiosk showing the location of all equipment;
b. if applicable, a written agreement with another food establishment in the mall which permits
access to a three compartment sink;
c. photographs or renderings of the proposed cart or kiosk;
d. a proposed menu indicating all food and beverage items to be sold or served at the cart or
kiosk.
The Health Officer will review the above and either approve or deny the proposal. If approved, you will be
advised to apply for a foodhandling permit in the offices of the Board of Health in the Borough Hall. Notify
the Health Department at that time of the date the kiosk or cart will first be in the mall so that an inspection
can be arranged.
